Brussels Sprouts

With winter setting in already (hey summer, did you forget about us this year?) Daniel’s soccer season has started. Which means training on Wednesday nights. Which I have decided, this season, means Wednesday nights are my nights off. No cleaning, washing or any wife work at all! I can take a bath, secretly indulge in the Real Housewives and eat something I love but Daniel hates. I love Wednesday nights. 

With this new nominated night off I have decided to set myself a little challenge. I am going to make a meal that I think I hate but haven’t really ever eaten, at least not for a long time. We will talk about this more in a separate post. Last night was the start and I thought who better to take on then Brussels Sprouts.  I was convinced that I hated these green balls of healthiness but I couldn’t quite remember a time ever trying them. So I decided to play it safe and add lots of other goodness to help me out if I needed it. I was pleasantly surprised at the gorgeous green colour they turned when cooked. And even better – they tasted DELICIOUS. I love Brussels Sprouts.

Here is the recipe for those also wanting to be converted or for those that already are.  

Brussels Sprouts, halved
Olive Oil
Prosciutto or Bacon or Pancetta (I used prosciutto) 
Butter
Garlic, crushed
Fresh Breadcrumbs
Potato, baby Sebago, skin on
Parmesan Cheese 

Bring saucepan of water to the boil over high heat. Add sprouts and cook until tender (approx 7 minutes). Drain.
Boil potatoes until tender. Drain. 
Meanwhile, heat oil in frying pan over medium heat. Add meat. Cook until crisp. Transfer to a plate lined with paper towel. 
Melt butter in frying pan. Add garlic and breadcrumbs. Cook, stirring, until golden. 
Return meat to pan with sprouts, potato, parmesan and toss to combine. Season with salt and pepper. And vuala! Yummy green goodness ready to eat.

The best part was having a video call dinner date with my mumma who is New Zealand for work. Love long chats about everything and nothing with her. Then before I knew it hubby was home. Successful night all round. It’s the little things.  

PS. Who knew Brussels had an (s) on the end? I thought it was Brussel.
